Retarder-proofing cabinet for baking trays

The Atrepan retarder-prover cabinet allows the operator to achieve controlled leavening, maintaining the dough at a temperature of 4°C (40°F) inside a highly insulated and electronically controlled cabinet. This prevents the yeast from producing carbon dioxide while simultaneously allowing enzymes to convert carbohydrates into simple sugars.

These processes allow the user to manage the key stages of breadmaking, such as temperature, humidity, yeast, and timing.

The ATREPAN retarder-prover cabinet slows the fermentation process, maintaining the dough for a pre-set time of up to 72 hours.

The final phase of the program involves a very slow leavening process, ensuring very even heating of the product.

The ATREPAN retarder-prover cabinet is made with a single-piece structure clad in 18/10 stainless steel, with 70mm-thick high-density polyurethane insulation.

The molded bottom features rounded corners, designed to make the interior easy to clean.

The easy-to-use electronic control panel features a simple and intuitive programming system, allowing you to save up to 10 programs for up to 6 days.

Humidity is generated via a sophisticated steam system, all controlled from the electronic control panel.

Available in versions for 60x40 and 60x80 trays.
